Sunday Funday!

Happy Sunday, Crumbsters! In our house that really just means football. We're either watching it or wishing we were watching it. I say we but I'm more of the girl that just jumps on the Superbowl train and catches updates throughout the regular season. I also cheer for whomever I'm required to and when I'm required to as per our marriage license.

This morning tho was actually about fulfilling our Instagram winner's request of Peppermint Chocolate Cake Pops. (How do you insert drool emojis on a blog post?)



I always have the materials on hand for these because we can't buy the sticks or melting chocolate on island for them. And I still had some peppermint candies which worked perfectly.


Cake pops are easy to make although I'm terrible at the dip. I do everything right- I form the balls, make them round, and pop them in freezer to harden.



Then I dip my stick in the warm chocolate, into a ball, and pop in the fridge.



This is where things don't go perfectly. The chocolate is thick and I could definitely use practice LOL. I'm not sure how to get that smooth finish with chocolate melts. I use the ones from Michaels called Melt Crafts but I'm sure a nice chocolate ganache would be easier. I just don't think it would give that traditional cake pop flavour.




However, beauty is always in the eye of the beholder. Or, in this case, up to the tastebuds to decide.



If you google a recipe for cake pops, 99% of the time you will see a recipe that calls for a cake mix, and store bought frosting. I'm not sure why that is but made from scratch is just as easy and 9/10 better? I say it like that because I don't want to discourage anyone that doesn't like to bake :/ IF you want to try, and you would like a recipe, I have a great one. It's super easy and I'd like to go out on a limb here and say impossible to mess up.

The recipe comes from my Mom, and from a little book she gave me that she had for probably 30 years before I got it, and I've had it probably 20? I did get some of her other recipes when she passed thankfully!


BASIC WHITE CAKE
BASIC WHITE CAKE

Basic White Cake

Ingredients

  • 1 cup butter, softened

  • 2 cups sugar

  • 4 eggs

  • 3 ½ cups all-purpose flour

  • 1 teaspoon cream of tartar

  • ½ teaspoon baking soda

  • 1 ¼ cups milk +1 tablespoon lemon juice

    (or substitute 1 ¼ cups buttermilk)

  • 1 teaspoon vanilla

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour your cake pan- I use 9x13.

  2. If using milk, stir the lemon juice into the milk and set aside for a few minutes to curdle.

  3. In a large bowl, cream the butter and sugar until light and fluffy.

  4. Add the eggs, one at a time, beating well after each addition.

  5. In a separate bowl, sift together the flour, baking soda, and cream of tartar.

  6. Alternately add the dry ingredients and the milk mixture, and the vanilla, to the batter, beginning and ending with the dry ingredients.

  7. Beat just until combined- do not overmix.

  8. Pour batter into prepared pan.

  9. Bake for approximately 25 minutes, or until either a toothpick inserted into the center comes out clean or using a thermometer, you reach an internal temperature between 200-205 degrees.

  10. Cool in pan briefly, then turn out onto a rack to cool completely.


It's important to note that when you are using this cake for cake pops, you do not want to overbake it so keep a close eye on it!


If you want to turn this into cake pops, you'll need frosting. This is what I used- you can omit the peppermint.


  • ½ cup butter, softened

  • 2 cups icing sugar

  • 1 tablespoon heavy cream

  • 1 teaspoon vanilla

  • 1 teaspoon peppermint extract

  • I also crushed some peppermint candies and threw them in.


Just beat it all together. You can very easily adjust the consistency with a little more cream, or a little more sugar. Remember A LITTLE CREAM GOES A LONG WAY.


Now crumble that cake into itty bitty pieces, making sure there aren't any hard edge bits, and mix up with your frosting. I like to add the frosting to my mixer bowl first, and the crumbled cake on top otherwise the frosting tends to ride up the paddle and I find that annoying LOL


Form your little balls of joy and put them in the freezer to firm up- maybe 30-40 minutes. I dip them in batches because once they warm back up to room temperature they fall off the stick when being dipped.
